Not long ago I was having dinner with my hubbie at True Food Kitchen in Denver. If you’ve never experienced this place, you’ve got to try it!
One of my favorite things about True Food Kitchen is that everything on the menu makes you feel healthy but not in a way that excludes those people who might not dork out the way you will over a fresh-pressed kale juice.

The funny part about this kale juice is that I actually felt a little buzz from it. I don’t know if it was my mind playing tricks on me or the pure goodness of the juice, but it doesn’t really matter. I felt like I was having an adult beverage without the negative side effects of alcohol. It was a total win win.
This summer I’ve been inspired to create more yummy non-alcoholic drinkables so that even if you choose not to drink a cocktail, you can still get excited about other options. Sometimes when you’re cleansing and everyone else around you is drinking wine, beer and margs, you need to have your own special tonic.
I hope this Watermelon Summer Spritzer does that for you. It’s cooling, hydrating, thirst-quenching and delightfully sweet.

Watermelon Summer Spritzer
Yields 1 Carafe
Ingredients:
- 6 cups watermelon, chopped and chilled
- 8 sprigs of fresh mint
- 1/3 cup sparkling mineral water
- Ice
Directions:
In a high-speed blender combine watermelon until smooth. Using a hand-held strainer separate watermelon pulp leaving smooth watermelon juice. Fill a carafe with mint. Pour watermelon juice into carafe and top with sparkling mineral water. Stir with a long spoon to combine all the flavors. Serve in a wine glass filled with ice.
