When we say “eat more vegetables,” what do you picture? If you see a huge bowl of salad, you might be less than excited.
Because let’s be real: salads aren’t the most mouth-watering meal option. Don’t get us wrong, we love a good salad (especially one with a killer dressing and tons of crunch). But eating enough vegetables shouldn’t mean you’re constantly struggling to tackle a mountain of greens.
There are so many simple and delicious ways to get more veg into your day—without too many salads, overthinking, or meal prep overwhelm. So today we’re sharing our favorite hacks to sneak more veggies into your meals.
Are you ready to effortlessly eat more veggies?
Here are 7 of our favorite ways add more veg to our day:
- Blend them into smoothies. Spinach, zucchini, and even frozen cauliflower all disappear into a smoothie without changing the taste. You’ll get all your fiber and vitamins in one glass. Baby step: Start with baby spinach. It’s virtually flavorless and blends like a dream.
- Make veggie-loaded soups. Soups are your best friend when it comes to using up what’s already in your fridge. Toss in carrots, celery, kale, or whatever else is hanging around with some broth and spices. Let it all simmer into something nourishing and easy to eat. Pro tip: Soups freeze well, so you can always have some on hand.
- Double the veggies in your favorite meals. Whether you’re making tacos, stir-fries, pasta, or chili, just double the veggies. This is a low-effort way to level up the nutrition in meals you already love! Try the Chicken Cashew Stir fry in our cookbook.
- Snack on raw veggies. Pair sliced bell peppers, cucumber rounds, snap peas, or baby carrots with your favorite dip (bonus points: a veggie-forward dip like our Beet Hummus). This combo makes a totally craveable AND satisfying snack. Keep a stash handy in your fridge, you’ll thank yourself later.
- Keep frozen veggies on hand. Fresh is fabulous, but frozen veggies are the true weeknight heroes. They’re just as nutritious and already prepped, so they’re ready to go. No washing, peeling, or chopping required!
- Add greens to your eggs. If morning scrambles are your go-to, this hack is a huge win. Just sautée some spinach, kale, or even some frozen veg in the pan before adding your eggs. It’s a quick, nutrient-boosted way to start your day.
- Use veggie noodles. Veggie “noodles”—think zucchini noodles, carrot ribbons, and spaghetti squash—are a fun way to switch things up. This simple swap adds texture, flavor, and lots of veggie goodness.
There’s no need to try all of these hacks at once. Pick the tip that feels easiest for you this week, and build from there.
Eating more veggies doesn’t have to be hard, and it definitely doesn’t have to be boring.
